Carmel Apple Cupcakes



I have really been into baking lately so for fall/Halloween i wanted to make Caramel Apple Cupcakes (something i love but marry it with the cupcake another thing i love) & BAM! A recipe for Success! Thanks to justJENN for her recipe!

Apple Cupcakes: (Caramel Frosting to follow)
2 1/4 cups all purpose flour 1 1/4 cups sugar 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 2 large eggs 1/2 cup melted butter 1 cup applesauce 1 cup shredded apples

Pre-Heat oven to 350 degrees & line cupcake pan with liners.

In a large bowl whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.

In a mixer, stir the eggs, butter, and applesauce. Mix until combined. Carefully add the dry ingredients.


Now is when I shred my apples, her recipe called for Granny Smith Apples, I had Chiquita apple bites (red) on hand so that's what I used. Anywayssss shred them on a cheese grater , like you're grating cheese. BE careful the apple juice that comes from the apples makes it slippery & you can grate your hands (I did the second time I made these, & it was awful wahhh!) I like shredding them because you get a nice fine apple shred & the juice for a nice apple flavor in the cupcake. Now stir in the shredded apples into cupcake batter.

When filling the cupcake liners i filled them with about 2/3 to almost completly full. I did that so when they bake they will puff up & overflow slightly and have a nice rounded top (like an apple!) this makes decoration of the cupcake very cute and real like.

Bake for 15-20 mins test with a toothpick for the "done factor" (Toothpick comes out clean)

While the cupcakes cool on a wire rack, make the frosting err, Glaze its more of a caramel sauceyy glaze (lol)

ingredients:
1/2 cup butter
1 cup packed brown sugar
1/4 cup whole milk
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
1tsp cinnamon
1 TB maple syrup

In a saucepan on medium heat, melt the butter and brown sugar. Give it a stir every so often. When they are melted and bubbly, add the milk. Carefully raise the heat and bring the mixture to a quick boil. Careful – you don’t want to burn it. Once it foams up and turns that lovely caramel color, take it off the heat immediately





Remove pan from heat and stir in the powdered sugar and vanilla, cinnamon and syrup, mixing until frosting is smooth. I like to put it in the fridge and let cool & harden up (40 min worked for me). Then I simply frost the cupcakes by dipping them into the frosting, it can be very runny and just be a big mess so make sure you let it cool! You can also use a cream cheese frosting & drizzle the caramel over the top (Also effinnn YUM) but it does take away from the cute-ness of this cupcake.



So for the fun decorating part! After you dip the cupcakes in the Caramel Glaze you can roll the sides in sprinkles & for even more fun (and just for effect) pop in a Popsicle stick to make it look like a real caramel apple! Its honestly useless but its so cute & fun especially for kids or a party.This cupcake is really good! Like I said earlier I made them twice & got rave reviews, I suggest you to try it & please let me know how they turned out!!
