1 1/4 cups all purpose flour
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/8 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup vegetable oil
1/3 cup light molasses
1/2 cup maple syrup
1/4 cup water
2 tablespoons applesauce
Preheat oven to 350 degrees & prep your cupcake pan with liners.
Sift together the flour, ginger, cinnamon, baking powder, baking soda, cloves, nutmeg and salt.
Whisk together wet ingredients – oil, molasses, syrup, water and applesauce.
Stir the wet into the dry until nicely combined to make a nice cake batter.
Fill your cupcake liners about 2/3 full. Bake 15 – 19 minutes, depending on your oven, until a toothpick comes out clean.
After they have cooled frost however you like! Even sifted powdered sugar & cinnamon would be wonderful. I used Cream cheese frosting cause I had that on hand & piped it on with a french tip.
These cupcakes are so moist and delishh you wont even miss the butter or huevos ;]
